Oh-So-Good Oatmeal Raisin Cookies

It's been a busy week and will be a busy weekend for us. We just celebrated my daughter's birthday yesterday and still have lots to clean up. I'm starting to work on a project, making four circle skirts for four little girls to wear at a play for our local church and this weekend we will have a special service at our church to celebrate the Lord's Supper. Busy Busy! So I don't want to neglect my blog and thought I would share my favorite recipe. I got this recipe from the Whole Foods website but substituted and added some ingredients and made it my own but kept their title cause it sounds so much cooler than just oatmeal raisin cookies:

This recipe says it makes 2 dozen cookies but if you like your cookies nice and chunky like I do, then you will really have 14-16 big and chunky cookies.

4 tablespoons (1/2 stick) butter, softened 
3 tablespoons olive oil 

1/2 cup evaporated cane juice sugar 
1 egg 
2 teaspoons vanilla extract 
1/2 teaspoon sea salt 
1 cup quick cook or old-fashioned rolled oats 
1/4 cup ground flax seed
1 cup whole wheat pastry flour 
3/4 teaspoon baking powder 
1/2 cup seedless raisins
 1/2 cup of original applesauce
1/2 cup toasted pecans, finely chopped


Preheat oven to 375°F. Line 2 large baking sheets with parchment paper; set aside. 

In a large bowl, whisk together butter and oil until completely blended. Whisk in sugar, egg, vanilla and salt; set aside. In a second large bowl, combine oats, flax seed, flour and baking powder, then add to butter mixture and stir in applesauce, pecans and raisins mixing well to combine thoroughly.

Drop dough by the spoonful onto prepared baking sheets, spacing them about 2 inches apart, and bake until cooked through and golden brown, 10 to 15 minutes. Carefully transfer to wire racks and set aside to let cool completely.

Serve with a glass of milk or cup of coffee and Enjoy!
