Loaded Alfredo with Chicken & Veggies


I found this recipe in my Women's Health Magazine and read it has 
540 calories, 14g of fat & 520 mg of sodium so I knew I had to try it!
Olive Garden's Fettuccine Alfredo contains 1,220 calories, 75g fat & 1,350 mg of sodium! 
(that's what the magazine says) Never ordering that again! 
I love this recipe, it is both yummy and healthy!

Here is What You'll Need:

2 Tbsp unsalted butter
3 Tbsp flour
3 cups of 2% milk
2 cloves of garlic, chopped
2 Tbsp grated Parmesan 
Salt & Pepper to taste
1/2 Tbsp olive oil
2 cups broccoli florets
8 oz sliced mushrooms 
1/4 cup chopped sun-dried tomatoes
8 oz cooked chicken breast, thinly sliced or shredded 
12 oz whole wheat fettuccine (I used Linguine) 
I added the following Ingredients:
1 cup of sliced carrots
1/2 cup of sliced green peppers

It tastes really yummy with the added carrots and peppers!

How to Make it: For the bechamel sauce, melt butter in a pot over medium-low heat.
Then whisk in flour and cook for about 1 minute:

Slowly Whisk in milk then add garlic and simmer, 
whisking often for about 10-15 mins...

Stir in Parmesan and season with Salt & Pepper and keep warm...

Heat oil in a large pan and add stir fry your veggies 
Broccoli & Carrots first, then peppers & finally your 
mushrooms & tomatoes...

Once your veggies are cooked, stir in your chicken and season with Salt & Pepper. 
Cook Your Pasta, Drain (reserving 1 cup of cooking water)
Return pasta to bowl, add sauce and chicken mixture.
If your sauce is too thick add some of the pasta water to thin.
Serve and Enjoy!

I've made this recipe twice and love it!
